Sausage and Sweet Potato Casserole

Ingredients

Makes 6 servings

• 1.5 lb sausage links, sliced
• 3 sweet potatoes, diced
• 2 apples, diced
• 1 onion, sliced
• 3 tbsp olive oil
• 1 tsp fresh thyme

Instructions

1. Preheat oven to 400°F. Toss sausage, sweet potato, apple, and onion with olive oil and thyme.
2. Spread in a single layer on a large baking sheet or dish.
3. Roast 35–40 min, stirring once, until sweet potatoes are tender and sausage is cooked through.
4. Season to taste before serving.
