Clean-Out-the-Fridge Soup
A flexible brothy soup that welcomes almost any vegetable that needs using up

Makes 6 servings
- 2 tbsp olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 6 cups vegetable or chicken broth
- 5 cups assorted vegetables, chopped
- 1 can (15 oz) white beans, drained
- 1 cup cooked pasta or rice (optional)
- 1 pinch salt and pepper
- 2 tbsp chopped fresh herbs
Instructions
- Heat olive oil in a large pot and sauté the onion until softened.
- Add garlic and cook until fragrant, about 1 minute.
- Add the hardest vegetables first (carrots, potatoes, celery) and cook 3-4 minutes.
- Pour in the broth, bring to a simmer, and cook 15 minutes.
- Stir in quicker-cooking vegetables, greens, beans, and any cooked pasta or rice; simmer 5 minutes more.
- Season with salt and pepper, finish with fresh herbs, and serve hot.
