- 1 whole beef brisket (10-12 lbs)
- 1/4 cup coarse black pepper
- 1/4 cup coarse salt
- 2 tbsp garlic powder
- Wood chunks for smoking
Instructions
- Trim brisket fat cap to about 1/4 inch.
- Rub generously with salt, pepper, and garlic powder.
- Smoke at 225°F for 10-12 hours until internal temp reaches 203°F.
- Wrap in butcher paper and rest for 1 hour before slicing against the grain.
